Ingredients

  • 300 g chicken breasts
  • 4 slices bacon
  • 450 g microwaveable long grain rice
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 3 teaspoons freshly grated ginger
  • 2 eggs
  • 120 g frozen peas
  • 2 shallots, sliced
  • 1 long fresh red chili, finely sliced
  • Oyster sauce, to serve
  • Salt
  • White pepper

Instructions

1- Preheat the Airfryer to 180°C (356°F). Place the chicken breasts and bacon on the Airfryer rack. Cook for 8 minutes until fully cooked. Remove and let cool slightly. Slice chicken and chop bacon.

2- Meanwhile, separate rice grains with your fingers. Microwave the rice for 1 minute.

3- Transfer rice to a 20 cm round high-edged dish suitable for the Airfryer or a cake pan. Add oyster sauce, soy sauce, sesame oil, grated ginger, and 2 tablespoons of water. Mix well.

4- Place the dish in the Airfryer and cook for 5 minutes until the rice is tender.

5- Add beaten eggs, peas, chicken, and half of the bacon. Cook for 3 more minutes until eggs are fully cooked.

6- Stir in half of the shallots and season with salt and white pepper.

7- Serve sprinkled with chili, remaining shallots, bacon, and extra oyster sauce as desired.
